Lentil soup

Combine these (in order) and boil:
2 qts veggie broth
2 c. cooked lentils
2 tbsp olive oil
2/3 c. chopped carrots
2/3 c. chopped celery
1 c. chopped onion
1 can chopped tomatoes

Reduce heat to low and add spices:
1 tsp salt
1/2 tsp coriander
1/2 tsp cumin
1/4 tsp black pepper
1/4 tsp ginger

Simmer for 20 mins.
